Food Vendor Requirements:
1. Food handlers must wear hair restraints that cover the full base of the head (ball cap, hairnet, etc - no visors).
2. No bare hand contact.
3. Chemical test strips for sanitizer must be present.
4. Hand sink must have soap & disposable towels.
5. Hot water must be a minimum of 100 degrees at hand sink & 110 degrees at 3 compartment sink.
6. Food must be offered in/on disposable surface.
7. Mechanical refrigeration must be used for cold holding of potentially hazardous foods. Ice is not allowed.
8. Hot holding must be used for hot holding of potentially hazardous foods.
9. Vehicle must be at a minimum ten feet away from combustible constructions and material.
10. Vehicle may not be parked in a fire lane or handicapped parking space.
11. Food service must be positioned so that the customer line is directed away from the drive path.
